Pineapple Upside Down Cake

This recipe is one of my favorite family recipes...my grandmother taught us this one when we were wee little ones and it is delicious!

Pineapple Upside Down Cake

Ingredients:
2 cans of Crushed Pineapple
1 box of White OR Yellow Cake Mix (Do not make)
2 sticks of Salted Butter

Preheat oven to 350 degrees.

Evenly spread crushed pineapple (including juice) in the bottom of a 9x12" glass cooking dish.

Layer the dry cake mix on top of the crushed pineapple.

Thinly slice butter and layer on top of dry cake mix, try not to leave any gaps in the butter.

Cook for 20-30 minutes, until the butter is a golden brown color!

Let cool for several minutes before serving. Delicious with a scoop of vanilla ice cream or whipped topping.

Crock-Pot Meatballs

These are simply delicious and SUPER easy to make....gotta love a Crock Pot! This recipe is courtesy of one of my co-workers, who brought it to a work function.

Crock Pot Meatballs

Ingredients:
1 bag of frozen Meatballs (I prefer the mini ones)
1 bottle of Sweet Baby Rays BBQ Sauce (any BBQ works but I love SBR)
1/2 jar of Grape Jelly
2 Tablespoons of Yellow Mustard

Combine all ingredients in a standard Crock Pot and heat on high until meatballs are heated thoroughly (time varies with different Crock Pots) typically 2-3 hours.

Serve with toothpicks straight from the Crock Pot! Huge hit as an appetizer at parties and get togethers.

A Post Where I get to Show Off My Beautiful Babies

Sebastian and Paisley's Uncle Isaac is a wonderful photographer but is based out of Florida so we don't get to see him often. When he does come up we always look forward to him taking pictures, he is at an advantage because he gets to spend more than a few hours with them and catches them in great moods. These are some of the wonderful lifestyle pictures that he took during his visit at Jonathan's graduation. Sebastian was the star spotlight since he was in a great mood and just loved hanging out with Uncle Isaac!

Lake James Summer Vacation

Paisley went on her first family vacation this past week, we headed out to Lake James for some peace and tranquility (and craziness with 15 people)!

I did not get a whole lot of pictures as there was a lot of sitting around and the weather did not cooperate almost the entire week! When it was briefly sunny, Paisley and I elected to stay on shore as the required life vest ate up her tiny 9 lb frame! So, I am going to give you a look into our trip through the pictures I did get...these do not include the IPhone pictures, which I am sure you all saw all over Instagram and Facebook:)

Despite the weather being horribly oppositional, it was a great relaxing week just hanging out with family...ALL the family, which is something that doesn't happen often.
